Ingredients

30 minutes
4 servings
  1. For Rajma
  2. 2 cups Rajma or kidney beans (washed, soaked for 8 hrs)
  3. 2 tbsp Desi pure ghee
  4. 1Bay leaf
  5. 1 tspCumin seeds
  6. 2 Cloves
  7. 1Cinnamon small piece
  8. 2Cardamom pods
  9. 1/4 tspAsafoetida
  10. 2Finely Chopped onions medium
  11. 1 cupTomato puree
  12. 1 tbsp Chopped ginger and garlic
  13. 2Chopped green chillies
  14. 1 tbsp Rajma masal
  15. 1.5 tsp eachCumin and coriander powder
  16. 1 tspTurmeric powder
  17. 1-1.5 tspChilli powder
  18. as per tasteSalt
  19. 1 tspAnardana or pomegranate seed powder
  20. as neededWater
  21. as neededCoriander leaves to garnish
  22. For Rice:
  23. 2 cupsbasmati rice (washed and soaked for 1 hour)
  24. 1 tablespoonDesi ghee
  25. 1 tspCumin seeds
  26. 1Bay leaf
  27. 1 tspBlack pepper
  28. as per tasteSalt
  29. 1/4 tspSugar
  30. 2.5 cups Boling water(as per rice quality)

Cooking Instructions

    First, strain the rajma and pressure cook with 2 cups of water, 1 tsp ghee, 1 tsp salt and all the whole spices.

    Pressure cook till 8 Whistles or till it is completely cooked. Cook and remove from cooker. Remove all spices.

    Heat ghee, add cumin seeds. When they pop up, add hing or asafoetida, onions and saute' till golden and aromatic.

    Add ginger and garlic paste, green chillies, and saute well. Add all the spice powders and mix well.

  5. 5

    Then mix in the tomato puree, 1 tablespoon water and cook covered till fat releases from sides. This will take around 8 to 10 minutes.

    Then add rajma, reserve 1 tablespoon aside. Mix well. Adjust seasoning, add Rajma masala and stir well.

    Tip:Crush the reserved Rajma and add for for thickness. Adjust seasoning and cook for 8 to 10 minutes. Add a spoonful of ghee on top and your Rajma is ready. Garnish with chopped coriander leaves.

    To prepare Jeera rice:
    Heat ghee in a kadhai. Add jeera and let it pop.
    Then add bay leaf, black pepper and saute well

    Strain the soaked rice and add to jeera. Stir fry rice for 2 minutes till glossy.

    Then add boiling hot water,salt, sugar and cook covered till just done. Strain out any extra water and keep covered till serving.

    Add 1 spoon full of ghee and mix with a fork. Then serve with hot homestyle Rajma! Enjoy!
