Cooking Instructions

Hung curd for 3-4 hours, it will reduce to some extent. Boil milk and allow to cool down.

In pan add sugar and caramelise under low to medium flame till sugar granules fully melts and starts changing colour, it will turn brown but be careful not to burn it, this process takes around 5-6 minutes.

After caramelise immediately pour 1 cup milk and stir continuously so that caramelised sugar is mixed well with milk and colour of milk changes.
Add the remaining milk and add sugar and give a rolling boil.
Now simmer milk under low flame so that milk gets reduced and thickened to some extent, now switch off flame and allow milk to reduce its temperature. - 4
In a mixing bowl take hung curd and whisk it properly to make it lump free and then add lukewarm milk and mix very nicely. Final mixture is ready.

Now pour the mixture to setting cups / bowl / pot / dish and keep in warm place overnight and then refrigerate the following day.

Serve chilled, garnish with dry fruits of your preference and serve.
