Mishti Doi /Dahi or Sweet Yogurt  is a traditional Bengali delicacy. It is more than a dessert and a part of Bengali culture and traditions.
This delicacy is prepared by boiling milk until it is slightly thickened, sweetening it with sugar or date palm jagerry, and allowing the milk to ferment overnight.
The taste that comes from the caramel, the creamy, dreamy sweet yogurt which has a prominent sour after taste is something so heavenly that cannot be expressed in words.
Do try this recipe you will surely love it

Ingredients

  1. 500 mlfull fat milk
  2. 3 tbspsugar
  3. 100 gthick sour yogurt or curd
  4. For caramel..
  5. 2 tbspsugar
  6. 1/4 cupmilk at room temperature

Cooking Instructions

  1. 1

Add sugar and milk in a thick bottomed pan. Give it a quick boil over high heat, reduce the heat. Keep stirring frequently over medium heat until reduced to 50%.
Then remove from the heat and keep aside.

  2. 2

Further, heat a nonstick saucepan for making the caramel. Add sugar and keep on stirring (try to use silicone spatula) over low heat until the sugar melts, and turns sticky and rich brown in colour. Be very careful at this stage, the caramel might burn within a few seconds.

  3. 3

Remove from the heat, and add milk into the caramel. Be careful, while adding the milk to the very hot caramel, a few drops might split here and there. The caramel will turn hard after adding the water, don’t worry. Transfer the saucepan over the heat again, and keep on stirring quickly over low heat until all the caramel which would be sticking at the bottom of the pan dissolves. It will take 1 or 2 minutes.

  4. 4

Now pour the reduced milk into the caramel. Mix well, the milk mixture will turn into light brown color, keep aside.

  5. 5

Further, Whisk the yogurt until smooth and lump-free.
When the milk mixture becomes lukewarm, add the yogurt. Mix well, I use a hand whisk for even mixing.
Pour the yogurt mixture into earthen pots  and close with aluminum foil and tie using a rubber band.
keep them overnight or 5-6 hours in a warm place.

  6. 6

When the yogurt sets, keep it in the refrigerator for 1-2 hours, serve cold or at room temperature.
