Risotto is a popular rice dish of Italian cuisine cooked with starchy short grain rice called Arborio and broth until it's creamy and luscious. The broth can be of Vegetables, Meat or Fish. In this one, I have used Maggi seasoning cube instead. And have blended in fresh boiled Green Peas for a more creamier texture with Barnyard Millet.
Millets and their beneficial properties are known to everyone. It is rich in Fiber, is gluten free and popularly known for it's high levels of Protein, Calcium, Iron, Minerals and Vitamin B complex. Barnyard Millet or Sanwa Rice is rich in Phenols and Flavanoids which makes it a superior source of Antioxidants that are essential for maintaining a good health, skin and hair. Overall a perfect Lunchbox idea, a healthy Brunch idea and a super delicious comfort food of all times, this is a sure shot hit.

Cooking Instructions

Wash and soak the millet in enough clean water overnight or at least for about 5-6 hours.

Meanwhile, heat olive oil and butter in a pot. Saute chopped garlic and onion until translucent and aromatic brown. Add soaked and drained barnyard millet to it now. Also add a cube of maggi seasoning. Cover and cook with some water added for 18-20 minutes.

After the stipulated time, uncover and give it a good mix. Add half of blended green peas mix to it. Also add the other half of boiled whole green peas too. Adjust salt and pepper. Also stir in two tablespoon of any grated hard cheeses like parmesan.

Cook for about 2-3 minutes more. That's it. Garnish with some freshly chopped coriander or parsley. Drizzle a little olive oil on top. Serve immediately. Enjoy!
