This is a basic recipe. You can add Peas, asparagus, mushrooms or different cheeses to change it up. It's a perfect side dish. Or add cooked chicken and make it a meal.

Ingredients

  1. 1 cupArborio rice
  2. 2 tbspButter
  3. 1 tbspEvoo
  4. 3 1/2 cupof hot chicken stock
  5. 1/2 cupOnion diced
  6. 2 cloveGarlic minced
  7. 2 tbspChopped fresh parsley
  8. 1/2 cupFreshly grated Parmesan cheese

Cooking Instructions

  1. 1

    Heat olive oil and butter in a medium sauce pot. Add rice and sauté for 3 minutes stirring constantly

  2. 2

    Add garlic, onion, salt and pepper. Cook for 2 minutes.

  3. 3

    Add 1 cup of hot stock and cook stirring constantly until absorbed

  4. 4

    Add another cup of stock and stir frequently until absorbed.

  5. 5

    Add 1 cup of stock stirring until absorbed

  6. 6

    Add remaining 1/2 cup of stock and stir until mixture thickens. Then add Parmesan cheese and parsley mix well.

  7. 7

    Plate and serve with a drizzle of evoo
