This is a basic recipe. You can add Peas, asparagus, mushrooms or different cheeses to change it up. It's a perfect side dish. Or add cooked chicken and make it a meal.

Cooking Instructions

Heat olive oil and butter in a medium sauce pot. Add rice and sauté for 3 minutes stirring constantly

Add garlic, onion, salt and pepper. Cook for 2 minutes.

Add 1 cup of hot stock and cook stirring constantly until absorbed
- 4
Add another cup of stock and stir frequently until absorbed.
- 5
Add 1 cup of stock stirring until absorbed
- 6
Add remaining 1/2 cup of stock and stir until mixture thickens. Then add Parmesan cheese and parsley mix well.

Plate and serve with a drizzle of evoo
