Ingredients

40 minutes
Makes 4 parathas
  1. 1 cuprajma (small variety) (overnight soaked)
  2. 1/4 cuponions 🧅, chopped
  3. 1/4 cuptomatoes, 🍅 chopped
  4. 1 tspgarlic, chopped
  5. 1 tspginger, grated
  6. 2 tbspcoriander,chopped
  7. 2 tspoil
  8. Dry Spices :👇
  9. 1 tspred chilli powder
  10. 1/4 tspturmeric powder
  11. 1 tspcoriander powder
  12. Salt to taste
  13. For the dough : 👇
  14. 1 cupwhole wheat flour
  15. Salt to taste
  16. 1 tspoil
  17. Other Ingredients: 👇
  18. 100 gmspaneer, grated
  19. 1/4 cupspring onions, whites & greens
  20. Oil to cook the parathas

Cooking Instructions

    Assemble all the ingredients. Take the soaked rajma in a pressure cooker

    Add salt too the rajma & take 5-6 whistles in pressure cooker. Once the air is released, open the pressure cooker & drain the rajma..Keep aside..

    Take oil in a pan & when the oil becomes hot, saute onions, garlic & ginger.

    Add the tomatoes & saute well till the mixture is dry.

    Add cooked rajma & mix well. Add curds & cook till the mixture is dry. Add all the dry spices & cook till everything merges well.

    Finally,add coriander & mix well. Mash the cooked rajma a little coarsely.

    Take wheat flour in a taas/ big plate. Add oil & salt. Mix Add water slowly to make a soft dough. Cover & keep aside for 10 minutes.

    Now make equal size balls from it. Roll 1 big slightly thick chapati from it,with the help of a little dry flour.Roll 3 more chapatis.

    Dry roast all of them on a griddle & keep aside.

    Now take1 chapati on a dry surface,put 1 tbsp of rajma mixture. Put grated paneer& spring onions.on top.

    Now fold from all 4 sides & stick it with the help of water. Make a square envelope paratha.Put it on a hot griddle.

    Put oil & cook the parathas till golden & crispy.

    Take the paratha on a plate & cut into triangle 📐..Make all the parathas the same way.

    Garnish the parathas with spring onions & cooked rajma.Serve these parathas with a bowl of fresh curds.
