Banana cake is a pleasant childhood memory. I remember visiting a relative and eating this cake at their house. My sister and I loved the cake so our mother asked our aunt what it was made of and she was surprised that it was made with bananas. My sister hates bananas but she relished this cake.😅
After so many years, when we recalled this memory, I wanted to try and make this cake but none of us remembered the whole recipe. After browsing through several different recipes, here's my version of the recipe which turned out really well.
Whenever we bake a cake, we don't really have the patience to let it cool completely and we tend to eat it while it's still warm.😋 And I have to tell you this cake tastes great when it's warm! Do try this cake recipe and let me know how you enjoyed it!

Ingredients

4-5 servings
  1. 2ripe bananas (you may use the overripe ones whose peels have turned black)
  2. 1 cupfine semolina (rava)
  3. 3-4 tablespoonscurd
  4. 1and 1/4 cup powdered sugar
  5. 2-3 tablespoonsghee or butter + 1 teaspoon ghee/ butter for greasing the baking tin
  6. 1-1/2 teaspoonvanilla essence
  7. 1 teaspoonbaking powder
  8. 1/2 teaspoonbaking soda
  9. 1 teaspoonrefined flour
  10. 1-2 tablespoonschopped dry fruits as per your choice

    Heat ghee/butter in a pan. Add semolina and roast well till it turns golden brown and you can smell the aroma. Remove from flame and let it cool. (If the semolina isn't fine grind it in a mixer prior to roasting.)

    In a bowl, mash the bananas well and make it into a puree. You can also grind the bananas in a blender to make the puree.

    Add the powdered sugar to banana puree and whisk it well with a beater (You may adjust the amount of sugar as per your taste and the sweetness of the bananas).

    Add 3-4 tablespoons of curd and give it a whisk.

    Add vanilla essence, baking powder and baking soda and mix well.

    Add the roasted semolina to this mixture and mix well to avoid the lumps. Adjust the consistency of the cake batter by adding milk or a spoon of wheat flour as required.

    Grease the baking tin with ghee/butter and dust it with a teaspoon of refined flour.

    Heat the pressure cooker on low flame with lid closed for 5-8 minutes and keep a stand in it. Remove the whistle and gasket from the lid.

    Pour the cake batter into the greased baking tin and give it a tap to let it spread evenly.

    Sprinkle chopped dry fruits of your choice on the top. I used chopped almonds.

    Place the baking tin with cake batter in the cooker and bake for about 20 minutes or till done. Check if it's baked well by putting a toothpick or knife in the cake. If it comes out clean switch off the heat. If the batter sticks to it, bake for few more minutes and check again.

    Let it cool for 25-30 minutes and then demould the cake after loosening the sides with a knife and flipping it over a plate. Cut into slices and serve. The banana cake tastes great while it's still warm.
