This Italian pasta with Mushrooms is a delicious and Wholesome meal.
My family loves mushrooms in pasta as they give a delicious bite and texture to the soft pasta. Also being a Nutritionist, I like to add mushrooma as they give a vegan protein boost to the pasta which is high in carb. Mushrooms also are good sources in vital vitamins like B complex, K and D along with minerals.

Ingredients

2 servings
  1. 2 cupsPenne pasta
  2. 2 cupswashed and sliced mushrooms
  3. 1 tablespoonolive oil + 1 teaspoon for cooking
  4. 1 tablespoonchopped garlic
  5. 1small chopped onion and tomato each
  6. 1/2 cupready made pasta sauce
  7. 1 teaspoonsalt or as per taste + 1 teaspoon for cooking
  8. 1 pinchsugar
  9. 1/2 teaspoonpepper or chilli flakes and Italian pasta seasonings each or as per taste
  10. 1/4 cupboiled corn
  11. 1/2 cupgrated parmesan cheese or as needed to top up

Cooking Instructions

20 minutes
  1. 1

    First, boil the pasta in 12 cups of boiling water, 1 teaspoon olive oil and 1 teaspoon salt till tender for around 8 to 10 minutes. Then separate from water, immerse in cold water till use. Reserve the cooking water.

    Heat 1/2 tablespoons oil in a pan. Add the mushrooms and saute them for 5 minutes till they are soft and turn golden. Also they will absorb the water and shrink a little. Transfer to a plate.

    Heat remaining oil. Saute onions till translucent. Then saute garlic for 2 minutes. Then mix in the tomatoes and 2 tablespoons cooking water and cook till soft. Then add pasta sauce, salt, pepper, a pinch of sugar and the Italian pasta seasonings. Mix well.

    Then mix the penne pasta and cooked mushrooms. Top with boiled corn pearls.
    Mix gently for 1 minute.

    Switch off the heat. Mix in the parmesan cheese, serve immediately topped with more parmesan and a side of garlic bread and soup of your choice. Enjoy.
