This is a first for sure…Crispy Fried Amritsari Fish on my blog. I am a vegetarian by choice but I do cook non-veg limited to chicken usually. Now that I am in Guadalajara, Mexico my son got some Basa Fish Fillets and asked me to make Amritsari Fish. For a moment I went blank as I couldn’t remember the recipe. It has been more than 20 years since I cooked it. My husband loved fish and would ask me to shallow fry or grill it for him. His favorite was a full pomfret marinated in Mint and Coriander dip. Amritsari was for starters for guests. I was a little finicky about handling fish and he would assure me that the fish would be clean. He would get it cleaned nicely and would say that it is just like paneer you can handle it!! Trust a sardar comparing fish to paneer! What is Amritsari fish? A recipe for fish fillets which emanated in Amritsar, a city in Punjab, North India. It is famous for it's Amritsari kulchas or Amritsari naan.The Amritsar fish is a fried crispy fish recipe found on the streets of the city of Amritsar. The variety of fish isn’t really important here as you just need a good deboned fish dressed into fillets. The recipe is very simple and very delicious. Crispy gram flour covers scaly white fish fillets that are spiced with Indian flavours of ginger, garlic, cumin powder and coriander powder. You can add chilli powder and garam masala if you like to eat spicy but my family is on the milder side and I skipped the chilli powder and garam masala.

Ingredients

  1. 500 gmwhite fish fillets cut into chunks or cubes
  2. 6 clovesgarlic
  3. 1 inchginger crushed
  4. 2 tbsplemon juice
  5. 1 tspcumin powder
  6. 1 tspcoriander powder
  7. 1 tspcarom seeds
  8. 1/2 tspblack pepper powder
  9. 150 gmgram flour
  10. 2 tbsprice flour
  11. 1egg
  12. as neededOil for frying
  13. to tasteSalt

Cooking Instructions

    Marinade the fish by blending the crushed ginger, garlic, lemon juice, cumin, coriander powder, 1⁄2 tsp black pepper powder, and carom seeds, salt to taste and add a little water to make a paste. Place the fish chunks in a bowl and pour this marinade over them and toss with a fork. Sieve the rice and gram flour and sprinkle over the fish coating it nicely add the egg and mix with fingers or a fork and set aside for 15 to 30 mins.

    Heat oil in a pan and drop a few pieces of fish into the hot oil and fry for 2-3 minutes flipping it until they are golden brown. Drain on a paper towel.

    Serve in a plate with onion rings, mint dip and sprinkle a little chat masala and serve hot with a lemon wedge to add some tang.Crispy fried Amritsari Fish is ready.My ultimate joy of cooking is in watchin my grandson relishing and asking for more.
