If your beets or/and carrots come with tops you just paid for both so cut and set aside the top use them for another recipe. Some people were brought up with beet dishes. Beets are sometimes rejected because of the popular canned pickled beets. Fresh beets according to the way they are prepared are a bit different. This is a great pairing.

Hold on!!! You may say well, I don't like beets. This isn't canned beets, pickled beets, or beet mush. This is fresh, with Parmesan cheese, sour cream, and bacon. Yes a bunch of bacon.

Beets are so delish and very good for the body. I have eaten them since I was little girl with my dad. Now I have introduced to me husband and he loves them too !

This beet salad is a very different (read: healthier ;) ) version of the beet salad I knew growing up in Newfoundland. It takes a bit of time in terms of prepping your ingredients (mainly the beets and carrots), but it's worth it.This is a great summer salad to serve with a BBQ, or on its own as a lunch. You can adjust the ingredient amounts for lesser portions- this salad serves approximately 6-10 servings if used as a side dish.

My mom (Julie) and I pickled something like 50 pints of these last fall with my fresh garden beets. After peeling, I sent them through my salad shooter for quick slicing. I believe you could also use canned sliced beets, but don't quote me on that!
