It is a simple lemon butter sauce salmon where you pound the salmon into cutlets like a chicken fillet and have a creamy sauce with lemon and I served it over a pasta

Ingredients

  1. 1 poundskinless fresh salmon fillets, gently pounded into cutlets
  2. 1/2 cupflour mixed with salt, pepper, honey sriracha, garlic and 3 tablespoons granulated Roman cheese
  3. Juice of 2 lemons
  4. 1/2 cup chicken stock
  5. 1 jalapeño, chopped
  6. 2green onions, sliced
  7. 2 Tbspcream
  8. Butter and olive oil for cooking
  9. 1 Tbspcold butter to finish
  10. Roasted jalapeño and angel hair pasta for serving

Cooking Instructions

    Lightly coat fish with flour mix,. Heat a film of oil and butter in a large skillet. Sear salmon on both sides to have a crust and cooked through to your liking. Remove to a plate.

    Into skillet add some butter and soften ialapeno then add chicken stock, cream and lemon. Reduce to a sauce then stir in cold butter. Taste and if too tart add in some sugar.

    Add pasta to the pan and toss with sauce. Add green onions and salmon.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
