Ingredients

  1. 3/4 th cup Maida or All purpose flour
  2. 1/4 th cup Whole wheat flour
  3. 200 ml or 1 cup yoghurt
  4. 1/2 cupSugar
  5. 1 cupgrated Carrot
  6. 1/4 th cup Olive oil or any other oil
  7. 3 tablespoonMilk
  8. 3/4 th teaspoon Baking powder
  9. 1/4 th teaspoon Baking soda
  10. 1/2 teaspoonVanilla essence
  11. 1 pinchSalt
  12. 1 teaspooncinnamon powder
  13. 1 handfulmixed nuts and raisins
  14. 1 teaspoontoasted flax seeds

Cooking Instructions

  1. 1

    Sieve together both types of flour, baking powder, baking soda and cinnamon powder. Keep aside.

    Take 1 cup of yoghurt in a bowl and beat nicely.

    Add sugar and stir till sugar dissolves completely.

  4. 4

    Add olive oil or sunflower oil and mix.

  5. 5

    Also add vanilla essence and salt.

  6. 6

    Transfer the mixture to a big mixing bowl and add grated carrot.

    Stir well to incorporate. Also add milk.

  8. 8

    Slowly add the flour mixture in batches.

  9. 9

    Combine well to make a thick batter.

    Grease a rectangular baking dish and line with parchment/baking paper.

    Preheat oven at 180 degree C for 10 minutes.

    Transfer the cake batter to the dish.

  13. 13

    Sprinkle some mixed nuts, raisins and toasted flax seeds. This is optional step. You can omit adding nuts or flax seeds.

    Bake the cake in pre heated oven for 35 to 40 minutes (in middle rack) or until a toothpick inserted comes out clean.

    Take out from oven.Let the cake cool for 15 minutes before de moulding and cutting.

    Enjoy anytime as snack.
