When i first had lemon cake at starbucks cafe i was eager to try it at home. And one day i gather courage to give it a try and guess what 'voila' everyone loved the cake.
Cooking Instructions

Add eggs, milk and essence in a bowl and mix lightly.

Add sifted refined flour, baking powder, castor sugar, poppy seeds and lemon zest in a separate bowl and mix it.

Add butter in dry ingredients and half of the eggs mixture and beat on slow speed for 30 seconds and then increase the speed to high and beat for another 1 minutes to make the batter lighter.

Scrape out the sides of bowl and add remaining egg mixture in two batches and whisking for 30 seconds after each addition.

Pour the batter in greased tube pan or muffin cups and bake at 160°C for around 35-40 minutes.

In the meanwhile prepare lemon syrup by cooking lemon juice and sugar on low heat till the sugar is dissolved.

After the cake is done, remove from oven and poke the cake all over with a toothpick and brush it with the lemon syrup and let it rest for 10 minutes.

Remove the cake from tin and poke the bottom with toothpick and brush it with lemon syrup.

Put the cake in airtight container and let it rest for 24 hrs to absorb the all flavours.

I came across this recipe on the internet when I was looking for semolina cake recipe. In my first attempt I followed the recipe step by step, but unfortunately the cake turned out very dry. So, I made orange syrup and poured it on top, I thought the syrup would make the cake moist. The cake was nice and moist with orange syrup, but it had to be eaten as quick as possible, because it turned bad the next day.So, in this recipe I have made some adjustments where I reduced the amount of flour and sugar in it and added extra almond powder.
