Ingredients

35-40 minutes
  1. 185 gmUnsalted Butter
  2. 150 gmrefined flour
  3. 150 gmcastor sugar
  4. 4 gmbaking powder
  5. 28 gmpoppy seeds
  6. 6 gmlemon zest
  7. 3 mlvanilla essence
  8. 4 mllemon essence
  9. 3large eggs
  10. 35 gmmilk
  11. Soaking syrup
  12. 65 gmlemon juice
  13. 75 gmcastor sugar

Cooking Instructions

35-40 minutes

    Add eggs, milk and essence in a bowl and mix lightly.

    Add sifted refined flour, baking powder, castor sugar, poppy seeds and lemon zest in a separate bowl and mix it.

    Add butter in dry ingredients and half of the eggs mixture and beat on slow speed for 30 seconds and then increase the speed to high and beat for another 1 minutes to make the batter lighter.

    Scrape out the sides of bowl and add remaining egg mixture in two batches and whisking for 30 seconds after each addition.

    Pour the batter in greased tube pan or muffin cups and bake at 160°C for around 35-40 minutes.

    In the meanwhile prepare lemon syrup by cooking lemon juice and sugar on low heat till the sugar is dissolved.

    After the cake is done, remove from oven and poke the cake all over with a toothpick and brush it with the lemon syrup and let it rest for 10 minutes.

    Remove the cake from tin and poke the bottom with toothpick and brush it with lemon syrup.

    Put the cake in airtight container and let it rest for 24 hrs to absorb the all flavours.
