This is a flop proof recipe for Madeira cake. A must try for tea time treats. When I don't have lemon available, I usually substitute with Lemon Essence and its just as good😉. This quantity is for 1 loaf tin👍

~Cream Margarine n Sugar until light n fluffy
~Beat in the eggs,Lemon Rind n Vanilla essence
~Sift flour n Baking powder together and mix into the creamed mixture alternately with the milk
~Pour into a greased 23cm (9inch) loaf tin and bake at 180°F (350 F) for ± 1hour*Variation: Cherry Cake
Add 250ml (1Cup) cherries chopped, to the cake mixture and fold in.
