In a large mixing bowl, combine all the batter ingredients.

This time we chose octopus for the additional protein.

Mix all the ingredients until combined.

Oil in a large nonstick pan over medium heat.

Spread the batter in a circle on the pan. (2 cm thick).

Cook until the bottom is browned. Then flip the pancake.

Reduce heat to medium low and cover, cook 5 mins.

Uncover and flip it over once more.

For the finale, spread the okonomi sauce on top.

Sprinkle aonori over the pancake.

Drizzle mayonnaise over the sauce.

Sprinkle bonito fake over the pancake for the last topping.

Serve when it's fresh!

Once all the ingredients are mixed, start cooking right away to prevent the cabbage from becoming wilted.
