We had 2 ripe bananas on the counter. My husband asked that we do something with them, and I decided to bake muffins!

We had 2 ripe bananas on the counter. My husband asked that we do something with them, and I decided to bake muffins!
作り方

Leave the egg and milk out 1 hour prior to baking.

Place banana in a small pot, add water and sugar.

Heat to medium and cook until the banana gets really pasty.

Remove from the pot, and let it cool.

NOTE: Cook until the volume is about 1/3 cup.

Line muffin cups with paper liner.

Center a rack in the oven and preheat to 350F.

In a small bowl, combine all dry ingredients and whisk well.

In a large bowl, combine banana and all wet ingredients.

Add the dry ingredients into the wet ingredients.

Switch to a rubber spatula and stir gently.

Continue until no flour pockets remain. Don't over mix.

Divide the batter into muffin cups.

Bake muffins for 15-20 minutes and test with a tooth pick.

Remove from the oven and put the pan on a wire rack.

Allow the muffins to cool completely in the pan.

NOTE: For the sample, that's how much ripped banana I use.

Don't over mix the batter to keep a moist and fluffy texture.
