材料

3-4 servings
  1. medium firm tofu (pressed 30-60 mins, cut into cubes) 1 pack (14 oz)
  2. red bell pepper (chopped into bite sized pieces) 1 large
  3. french beans (chopped into bite sized pieces) 5 oz
  4. baby bella mushrooms (rinsed, putted dry, and sliced) 5 oz
  5. garlic (minced) 2 cloves
  6. ginger (minced) 1 tablespoon
  7. fresh basil 1 cup (packed)
  8. canola oil 1 tablespoon + 2 tablespoons
  9. red curry paste 3 tablespoons
  10. light or regular coconut milk 1 can (13.5 oz)
  11. liquid amino 2 tablespoons
  12. coconut palm sugar 1 tablespoon
  13. better than bouillon vegetable base 1 teaspoon
  14. dried kaffir lime leaves 5
  15. kosher salt to taste
  16. lime juice 1 tablespoon

作り方

    Cut 2 sides of the tofu package.

    Let it hang on the edge of the sink 30-60 minutes.

    NOTE: let the tofu itself squeeze out the extra moisture.

    Slice tofu in half, and cut into cubes.

    Gather all the ingredients.

  6. 6

    Oil in a large nonstick skillet over medium heat.

  7. 7

    Add tofu and let it brown on all sides. Set aside.

    Oil in a medium Dutch oven (2 US Qt) over medium heat.

    Add ginger, garlic, and curry paste. Cook until fragrant.

    Slowly add coconut milk into the pot to dissolve the paste.

    Add liquid amino, sugar, bouillon and lime leaves.

    Bring it to a simmer, add all vegetables.

    Cover and cook until all the veggies are heated through.

    Taste, add salt as needed.

    Add tofu and let it simmer for about 5 minutes.

    Remove from heat, stir in basil and lime juice.

    Serve with jasmine rice! Don't forget to remove lime leaves!

コツ・ポイント

After pressing the tofu, cook them on all sides for a firm texture. Add lime juice to have a bright after taste.
