作り方

Cut 2 sides of the tofu package.

Let it hang on the edge of the sink 30-60 minutes.

NOTE: let the tofu itself squeeze out the extra moisture.

Slice tofu in half, and cut into cubes.

Gather all the ingredients.

Oil in a large nonstick skillet over medium heat.

Add tofu and let it brown on all sides. Set aside.

Oil in a medium Dutch oven (2 US Qt) over medium heat.

Add ginger, garlic, and curry paste. Cook until fragrant.

Slowly add coconut milk into the pot to dissolve the paste.

Add liquid amino, sugar, bouillon and lime leaves.

Bring it to a simmer, add all vegetables.

Cover and cook until all the veggies are heated through.

Taste, add salt as needed.

Add tofu and let it simmer for about 5 minutes.

Remove from heat, stir in basil and lime juice.

Serve with jasmine rice! Don't forget to remove lime leaves!
コツ・ポイント
After pressing the tofu, cook them on all sides for a firm texture. Add lime juice to have a bright after taste.
