Singapore noodles originated in Hong Kong, and are even named after Singapore. They're also called Singapore Mei Fun, and are a popular Chinese take out item. Now you can have your own restaurant style Singapore noodles!

Singapore noodles originated in Hong Kong, and are even named after Singapore. They're also called Singapore Mei Fun, and are a popular Chinese take out item. Now you can have your own restaurant style Singapore noodles!

Gather all the ingredients.

Combine all the sauce ingredients in a small bowl, set aside

Prepare your noodles according to your package instructions.

NOTE: I soaked it in warm water for 15 mins until softened.

Drain well, and cut into 6"-8" length. Set aside.

Oil (1 tbs) in a stir fry pan/wok over medium heat.

Add egg and scramble the eggs until done. Set aside.

Continue to heat to medium, add rest of the oil and garlic.

Cook until the garlic gets fragrant.

Add shrimp and char siu.

Cook and stir until the shrimp starts to change the color.

Add onions, pepper, peas and cook for 1 minute.

Add noodles and cook until all the ingredients evenly mix.

NOTE: lift and toss the noodles to evenly combine.

Add sauce, toss well until the sauce is evenly coated

Add egg/scallion/bean sprouts, toss until evenly combined.

Taste, adjust with salt and pepper as needed. Serve.

To uniformly combine all the ingredients, the scooping and lifting motion is the key to loosening up the noodles.
