Gather all the ingredients.

Place the vegetables into a food processor.

Process them in batches until finely chopped.

Place the vegetables in a large bowl.

Sprinkle salt over the vegetables, and mix well.

Set a large strainer over a deep bowl.

Transfer the vegetables in the large strainers.

Let it stand for 60-90 minutes.

NOTE: Discard the liquid to avoid the bottom of →

the strainer sitting in the drained liquid.

Combine vegetables/sugar/mustard/fennel/vinegar in a pot.

Uncover, bring to a boil, reduce heat to a simmer.

Stir frequently and cook for 35-40 mins or until thickened.

Remove from heat, let it cool completely.

Store in an airtight container in a fridge.

NOTE: store in a freezer bag/container for up to 6 months.
