Gather all the ingredients.

If the leftover rice is cold, nuke it well.

NOTE: 2-go Japanese rice cups yield 700 g of cooked rice.

Oil in a wok over medium heat. Add eggs.

Scramble the eggs until done. Set aside.

Keep the heat at medium, add oil and onion.

Stir and cook until the onions turn translucent.

Add mixed veggies and cher siu, and cook for 1 minute.

Add rice and mix until everything is incorporated.

NOTE: Use the flat side of spoon/spatula to press down on →

the rice to gently loosen up any clumps.

Add all the sauce ingredients and mix well.

NOTE: Make sure the rice is evenly coated with sauce.

Toss in scallions/scrambled eggs and mix thoroughly.

Serve.

You can use other leftover veggies for this recipe but make sure to avoid any leafy veggies to avoid extra moisture.
