Avocado and boiled eggs are a healthy combination for having plenty of protein and good fats. Broccoli can be paired well with a variety of flavors, so we combined them all together with champagne vinaigrette :-)

材料

3-4 servings
  1. baby broccoli 1-2bunches (300-400 g)
  2. kosher salt for blanch water
  3. ripe avocado (chopped) 1 large
  4. boiled eggs (quarters) 2 large
  5. shallot (thinly sliced) 1 small
  6. for the dressing:
  7. extra virgin olive oil 2 tablespoons
  8. champagne vinegar 1 teaspoon
  9. country style dijon mustard 1 teaspoon
  10. maple syrup 1 teaspoon
  11. fine sea salt 1/8 teaspoon or to taste
  12. freshly ground black pepper 1/8 teaspoon or to taste

    Cut the broccoli into bite sized pieces.

    Combine all the dressing ingredients in a large mixing bowl.

    Stir in broccoli and shallots, and toss well.

    Add boiled eggs/avocado and toss gently to combine.

  6. 6

    Taste, and adjust with salt and pepper as needed.

  7. 7

    Let it sit in a fridge an hour before it's served.
