Soy Sauce Butter Pasta with Japanese Leek and Bacon

I wanted to eat pasta with slices of Japanese leek. The way I've cooked them here really brings out their natural sweetness.

Cooking Instructions

Cut the Japanese leek into 3 cm pieces. Cut the bacon into 1 cm pieces.

Boil plenty of water and add some salt and cook the pasta.

Heat a pan over medium heat and add the vegetable oil. Sauté the white parts of the leeks. Add the bacon, green part of the leeks and 1 tablespoon of soy sauce and cook until lightly charred.

Once the pasta is cooked, add to the leeks. Turn the heat to medium and add the pasta water, butter and soy sauce and season with salt and pepper.
