Banana bread has been in our family for years. It has evolved greatly as we continue to make it nutrient rich. Here's a good one with a lemon twist. #recipemarathon
Cooking Instructions

Combine dry ingredients

In a separate bowl, beat thoroughly margarine, sugar and lemon zest until fluffy.

In a separate bowl, combine eggs and mashed bananas. Mix well. Add to the margarine and sugar with lemon rind mixture, mix well.

Add the dry ingredients and mix quickly and evenly, using a wooden spoon or spatula.

Spoon into prepared loaf tin and sprinkle assorted grains. (sunflower seeds, chia seeds, sesame seeds or whatever grains available nuts etc)

Bake for 45- 50 minutes, until done or until a wooden skewer inserted in the center comes out clean.
Let cake cool in pan for 5-10 mins. Turn on to wire rack. To cool completely. - 7
Wrap with cling film and store. Best eaten the next day after all ingredients have set.
