A chowder full of vegetables with bacon and welsh onions

I came up with this after having a super delicious welsh onion chowder at a friend's house. It has lots of vegetables.

Cooking the welsh onion in butter really brings out its sweetness.
I think this dish will taste good with any vegetables you add. Add lots!
The miso adds a subtle flavor. It creates a richness. Recipe by Erueru286

Ingredients

4 servings
  1. 1Welsh Onion
  2. 50 gramsBacon
  3. 1/2Carrot
  4. 3cm Daikon radish
  5. 3leaves Cabbage
  6. 2Potatoes
  7. 20 gramsButter
  8. 500 mlWater
  9. 2Bouillon Soup stock cube
  10. 200 mlMilk
  11. 1 tspMiso paste
  12. 1Salt and pepper
  13. 1if you like Parsley or other seasonings

Cooking Instructions

  1. 1

Chop the onion into thin round slices, and the cabbage into medium sized pieces. Cut the carrot, daikon, and potatoes into chunks and the bacon into 5 mm thick slices.

  2. 2

Melt the butter in a saucepan and cook the onion until it wilts before adding the bacon. Add the rest of the vegetables, and after they've been coated with the melted butter, add the water.

  3. 3

Add the bouillon cube and boil it all together until the vegetables soften. Add the milk, and once the mixture returns to a gentle boil, dissolve in the miso paste.

  4. 4

Give the chowder a taste, add salt and pepper if needed and it's finished♪ Ladle the chowder into a bowl and top it with parsley or whatever you like. In this picture, I added broccoli.

  5. 5

Instead of daikon and cabbage, I made it using turnips (along with the leaves) and Napa cabbage. It brought out a sweet taste and was very delicious.
