Ingredients

  1. 2 tbspbutter
  2. 1medium yellow onion chopped very well
  3. 1can of diced tomatoes with green chiles(14.5 oz)
  4. 1 cupcorn(canned or frozen)
  5. 4 ozcream cheese
  6. 2 1/2 cupchicken stock
  7. 1 1/2 cuphalf and half
  8. 1 tspground cumin
  9. 1 1/2 tspgarlic powder
  10. 1salt and pepper to taste
  11. 3slices of bacon cooked to crispiness and diced into small pieces
  12. 2 1/2 cupchicken that had been cooked and diced
  13. 1 cupshredded sharp cheddar cheese
  14. 1tortilla chips to break into soup

Cooking Instructions

  1. 1

    Melt butter and sautee onion for 5-7 minutes in a large soup/stock pot. Add next 8 ingredients and simmer over low-medium heat until cream cheese is thoroughly melted.

    Add chicken, bacon and cheese to pot and continue to simmer another 5 minutes. Serve with crushed tortilla chips.
