Ingredients

  1. 1large white onion, diced
  2. 3 clovesgarlic, thinly sliced
  3. 2large tomatoes pureed
  4. 2medium, red and yellow bell peppers diced
  5. Seasoning cubes of choice. (optional)
  6. Salt to taste
  7. 4cups, boiled lima beans

Cooking Instructions

  1. 1

    Saute onions in oil till translucent, add garlic, stir till aromatic, add tomato puree.

  2. 2

    Add seasoning cubes of choice, stir and quickly add bell peppers Allow to simmer on low heat till the tomato thickens and oil floats to the top.

    Add beans, stir, add some hot water if the mixture is too dry. Allow to cook slowly for 20-30 minutes. This will allow infusion of flavor into the beans. Stir occasionally to prevent sticking to the bottom.
