Ingredients

4-6 servings
  1. 1 poundred kidney beans, rinsed and soaked overnight
  2. 1 poundsmoked Conecuh sausage, cut into 1 inch pieces
  3. 1/2 to 1 Tbspcayenne, your choice of heat
  4. 1-2 Tbspminced garlic
  5. 1medium onion, diced
  6. 1 Tbspdried parsley
  7. 1 tspdried thyme
  8. 1 tspCajun seasoning
  9. 1/4 cupavocado oil
  10. 1-2bay leaves
  11. 2 stalkscelery, diced
  12. 2 cupslong grain white rice

Cooking Instructions

    Wash beans in cold water and drain. Cover beans with water, soak overnight, covered. Drain beans, discard water. Rinse them well. >Never, ever cook beans in the soaking water, the soaking water absorbs most of the ingredient that upsets the stomach.<

    In large cook pot, heat oil, add onions, garlic, celery. Cook for 3-4 minutes.

    Add beans to pot, cover with water, add thyme, parsley, cayenne, Cajun seasoning and bay leaves, bring to a rolling boil, boil for 20 minutes.

    Reduce heat to medium low and simmer for 2-1/2 hours.

    Stir in sausage, continue to simmer 30 minutes. Meanwhile, cook rice until tender and fluffy.

    Serve beans over rice. Bake up a pone of cornbread. Enjoy and wash it all down with some sweet tea!

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
