Years ago a boyfriend of mine fondly remembered his late mother’s cranberry nut bread and showed his mom’s recipe to me. So one day I made it to surprise him, only that the surprised one was I. It was outstanding.

Cooking Instructions

Preheat oven to 350 degrees. Grease and flour 9-by-5-inch loaf pan.

Zest oranges in a large bowl to catch zest and orange oil. Squeeze oranges and reserve separately.

Place dry ingredients in a food processor. Mix for 10 seconds.

Slice butter in a few pieces and add to food processor. Pulse until mixture resembles cornmeal. Transfer to the large bowl with zest.

In a small bowl beat egg until thick and light. Stir in orange juice.

Stir this mixture into the flour mixture just until the ingredients are blended. Fold in cranberries and nuts.

Pour batter into prepared pan. Sprinkle with turbinado sugar, if desired.

Bake for 1 hour and 10 minutes, until the bread is golden brown and springs back when lightly touched.

Unmold and cool on a rack.
