Had some vegan cocos cream in my fridge. And to much veg. Made this simple soup. You can add any white veg you like (seleriac,white selery,leek,parsnip,...)

Had some vegan cocos cream in my fridge. And to much veg. Made this simple soup. You can add any white veg you like (seleriac,white selery,leek,parsnip,...)
Cooking Instructions

Clean and dice veg
- 2
Optional
Keep a bit of the kholrabi apart and chop into tiny sticks - 3
Sweat onion garlic and ginger in oil. Add rest of veg

Cover with approx 1 l water, add veg cubes.

Cook until tender

Add cocos cream and mix

Now make the toast
- 8
Cover with hummus
- 9
Bake the mushrooms add all the ingredients in a pan bake until golden brown. Put on toast

Serve with the soup
