In the pan heat up oil as mentioned. Add Garlic crushed bring them to little brown in colour. Don't burn. Keep the heat low. Add crushed chillies along with cumin. Cook 1 minutes. Add tomatoes sliced. Add some water and cover the lid till everything comes into a smooth paste and leaves oil. Add shredded carrot and cubic size potatoes. Cook 8-10 minutes. Covered. Meanwhile, heat some water in microwave or stove. Finely chopped your methi and add that into tempting hot water.

Don't miss this step it will eliminate the dirt from Meehi. Strain methi and wash once more with cold water. And add in the Pan. Cook for 2-3 minutes more till oil comes out. Garnish with Parsley and Green Chillies. Serve with tempting hot rotis.
