If you want a great warm chip dip just take away the hash browns and heat dip in oven until cheese melts :)

My kids love guacamole.

This is a variation of a Mexican recipe. Enjoy it with some Aperitif, salad, chili con carne, tortillas, rice, and more. It's one of my family's standard dishes.Just mix all the ingredients together and chill it in the refrigerator. Be sure to use a ripe avocado. Adding lime will give it a lovely scent. So I have been making this for years for just about every event/party I can just to have an excuse to make it because I think it tastes so amazing and everyone else has loved it . Over the years though it has received many tweaks and additions because I am always trying to get it perfect. But this is the latest tweak to it and I think the last. This is an amazing dip for crackers chips or my favorite as a filling for my own twist on crab rangoon

I like this dip as you can customize it very easily to your dietary need and flavor preferences. Using a soy mayo keeps it dairy free. I give three choices for herbs all offering you flexibility in flavor profiles. Serve this with veggies, bread or soft pretzels. I use the red onion for its sweetness. You may use any onion you prefer. Very versatile!
