Sautéed Spinach with Bacon and Eggs

I know that you often see this combination of ingredients, but I've been making this for breakfast since it's so nutritious and easy. It became even more delicious with grated cheese and has become our regular menu.
* This recipe uses boiled spinach.
If you cook the spinach beforehand (and freeze it), you can make this even busy mornings.
* You can substitute ham or wiener sausages for bacon, and komatsuna for spinach.
* Adjust the amount of grated cheese to your liking. Add lots if you really like. It'll add fragrance, but will make it more fattening. For 1-2 servings. Recipe by rose12
Cooking Instructions
- 1
Beat the eggs (add milk for a fluffy result). Chop the spinach and bacon into bite-sizes.
- 2
Melt butter in a frying pan and sauté the bacon. When it's cooked thoroughly, add spinach and sauté briskly. Add salt, pepper, and grated cheese.
- 3
Gather the cooked ingredients to the side of the pan. Pour the beaten eggs into the open space.
- 4
When the eggs are soft-set, mix and cook together with the spinach and bacon to finish.

I wanted to serve something like this for brunch. I made mine easily with frozen puff pastry. It's easier if you bake the puff pastry on the day before making the quiche. I recommend using a chunk of cheese; preferably parmigiano reggiano or comte! It really makes it different from when you use store-bought grated cheese or easy melting cheese. I usually season stir-fried asparagus and bacon with salt and pepper but I wanted to make something with different seasonings.I was vaguely thinking that there might have been a pasta dish like this, and I added in a soft-set egg. That was a very tasty decision. Before you eat it up, break open the soft-set eggs nicely and mix with the other ingredients. They're good with pasta or toast. For 2 servings.
