Easy Split Pea Soup

Great comfort food for using up Easter dinner leftovers
Cooking Instructions

In soup pot or large sauce pan heat oil on medium heat

Add onions and carrots, sauté until onions are translucent

Add peas, bone, broth, 2 cups of water (reserve 1 cup for thinning the soup later if needed), seasonings

Bring to boil then reduce heat to low

Simmer at least one hour, check veggies for tenderness. Add more time if needed

Remove ham bone from soup and take meat off the bone. Discard bone

For a chunky soup, using an immersion blender Purée the soup then add the cooked ham (1/2-1 cup of meat)

For smooth soup, add ham and then purée
- 9
Test for seasoning. Serve with fresh sprigs of parsley for garnish and a side of hot homemade biscuits (see my biscuit recipe)

My wife and I love Split Pea Soup. The weird thing is that I hate peas by themselves. I will systematically remove them from anything that has them. We took an old recipe that she has had for a while and converted it to the slow cooker.After a few tries and tweaks, we have worked out all the kinks and made a great soup. It is so good and it will thicken as time passes. It goes great with some rolls to dip into it. One of the best split pea soups that I have ever had. I am sure that this can be made into a vegan dish, by taking out the ham and replacing the chicken stock with vegetable. Worth the try.This is the prototypical slow cooker recipe. You just put all of the ingredients into the slow cooker, set the time, and forget about it for 8 hours. You can try to forget about it, but the smell will drive you crazy those 8 long hours. So... we ate this Christmas ham and there was a lot of meat leftover. I couldn’t bare to watch it get thrown away so I took it home. Could have just made some ham and cheese sandwiches or ham and potato salad but there was a bag of split peas screaming to be cooked.
