Bacon and pepper potato soup

I felt like a little fall soup in August. Cookpad gave me inspiration for this soup. #GlobalApron week 23 bacon and bell peppers

Ingredients

about 30 minutes
1 serving
  1. 2 stripsbacon
  2. 1medium potato
  3. 1 tablespoonbell pepper diced
  4. 1/3 cupbroth
  5. 1/2 cupmilk
  6. 1bit of garlic
  7. 1 tablespoononion butter seasoning
  8. 1bit of cheese for the top
  9. Salt and Pepper to taste
  10. 1/2 teaspoonflour

Cooking Instructions

about 30 minutes

    Peel the potato and dice it into cubes. Boil in water until fork soft. Drain and set aside.

    In a pan cook the bacon until desired crispness when finished remove from the pan and drain almost all of the bacon greased. Add flour and stir till no longer white. Slowly add in the broth, pepper, seasoning, and garlic. Keep on medium heat for a bit until the soup thickens.

    In a bowl, or ramekin place your cooked potatoes. Season with some salt and pepper. Then add the soup mixture over the top and then add your bacon. Sprinkle on cheese and bake until the cheese is melted.
