Taisen's cucumber and onion salad

I have seen a lot of different Italian pasta salads, so I decided to try and do one but I couldn't find the one that I wanted to try, so I ended up just buying stuff that I wanted in it. Nobody in my household would try it besides myself and my youngest daughter. She loved this so much that she kept asking for more. The only thing that she picked out of it was the tomatoes. I will definitely do this again, but I think that I might make a few changes just to make it different. The ham for instance, didn't really go with because I had gotten honey ham. I think regular ham would be better.

I am the only one in the house who eats this but my mom did it all the time growing up. I loved it and I always add extra vinegar because I love it so much. when my brother , sister and mom come over for a get together I make this for us all. they take home some everytime. I did this about a week ago and didn't do the boiling of vinegar and sugar. Instead I just added them in and mixed well. Turned out the same. I did add some diced carrots and I really liked it !

This came to me when I was nibbling on a cucumber after taking a bath, because I didn't have any dessert on hand.Just chill it very well in the refrigerator!!Slice the cucumbers very thinly.Use whatever ponzu sauce you like, but I recommend one that has yuzu in it. Anytime I BBQ in the summer I throw this quick and easy salad together. It's simple and delicious. Sometimes, I'll add greens like pea shoots or other micro greens with it.

use red bell pepper instead of green.and add tomatoes.

I am the only one who likes feta cheese. this turned out pretty decent. I like trying different veggies in a salad.

I made this wanting a greek salad but made due with what I had on hand. it was pretty good. would most definitely add tomato next time

I made this when I was out of dressing. It was really good, so I've been relying on it ever since.This is also good with mizuna greens or green bell peppers instead of cucumber.If you leave it standing for too long the tofu will start to exude moisture, so I recommend making it just before you plan to eat it. A light "chunky" side dish to compliment most grilled BBQ meals or serve with Italian dishes. The fresh basil gives it a nice flavor. Add a “hint of mint” (instead of basil) and black olives for a slight, cool refreshing taste, especially with Mediterranean dishes of lamb, grilled chorizo and/or seafood.

I don't like too tangy of cucumber salad. This salad is just right but I am sure that if it is too tangy you could add more water and if it is not tangy enough just add more vinegar.

This is a salad I make ALL summer. This is just the basic recipe but you can think outside the box with this and add Parmesan, pepperoni, provolone, salami, additional veggies like roasted peppers or celery etc etc. Its so simple but delicious!
