Breakfast Apples

I made this sugar free, vegetarian friendly breakfast dish for myself and my fiancé when we were starting a new, healthier lifestyle.

We love to eat it alone or add to a bigger meal. It also goes great on top of oatmeal.

It is not very sweet so you may want to increase the amount of honey to taste based on the tartness of your apples. I find that granny smith's worth great as do pink lady and fuji.

Ingredients

  1. 3Large Apples
  2. 2 tbspbutter
  3. 1 tspcinnamon
  4. 1/4 tspground cloves (optional)
  5. 3 tbspraw honey
  6. 1/2 tspvanilla extract
  7. 1/2 cuporange juice or apple cider

Cooking Instructions

    Wash, core, and thinly slice apples.

    In pan, melt butter until it begins to brown slightly.

  3. 3

    Add cinnamon, cloves, honey, and vanilla. Mix together.

  4. 4

    Add apple. Stir until coated with mixture. Let brown for about two minutes, stirring constantly.

    Add juice. Stir.

  6. 6

    Cover and let simmer for 5 minutes.

  7. 7

    Remove lid and simmer on med - high heat, stirring constantly until sauce thickens.

    Serve hot.
