Cucumber salad

This has become a go-to for weekly meal prepping. It's such a simple, but tasty recipe and adds a lot of freshness to a meal. I usually pair it with some quinoa or brown rice, some chicken or drained and rinsed chickpeas and some feta cheese. If you'd like to take some of the 'bite' out of the raw onion, soak it in some cold water for a few minutes first.

"Rübensalat" This is a recipe from Sachsen - Anhalt in Germany . They made up for the times when there was not much meat to bring colour and variety onto their tables with vegetables.

I felt like eating a salad that didn't use sesame or olive oil. So I made a oil-free salad with kombu tea.You can also use regular tomatoes. Recipe by Hanacchitomocchi

Low carb

A recipe from my mom who's from Stuttgart :) German cucumber salad marinates the cucumbers and other veggies in a vinegar-heavy dressing so it's rather tart and super refreshing in the summer. Also no oil so very healthy!
