Ingredients

Makes 9 serving
  1. 2 cupsall-purpose flour
  2. 1 cupunsalted butter or veg oil..I used veg oil
  3. 1/2 cupicing sugar
  4. 1/3 cupcornflour
  5. 1/2 cupmilk
  6. 1 pinchsalt
  7. Extra flour for dusting
  8. For the filling:
  9. Any kind of jam you fancy

Cooking Instructions

    Get your ingredients ready. Preheat your oven to 180 degrees C

    Sift your dry ingredients

  3. 3

    Add in your butter or oil. I used a spatula to mix the oil and flour mixture. Add the milk little by little and form a dough

  4. 4

    Chill the dough for about 15 min-1 hour

  5. 5

    Pour a little flour on your working surface and roll out the dough to 1/2 cm thickness

  6. 6

    Cut out the 18 pieces. Using a small round cutter, a bottle top can do,punch small circles from 9 of the shortbread dough cuts.

    Place the cut dough on top of the cut dough and fill it with jam

  8. 8

    Place your cookies on your baking tray and bake for 15-20 min

  9. 9

    Ready to eat. Allow them to cool first
