Ingredients

  1. 1/2 cupcaramelized sugar syrup
  2. 1 cupchopped dates
  3. 1 cupgrated carrots
  4. 1/2 cupchopped walnuts
  5. 1 1/4 cupAll purpose flour
  6. 1 cupsugar
  7. 1 cupVegetable oil
  8. 2eggs
  9. 1 tspbaking powder
  10. 1/2 tspbaking soda
  11. 1/4 tspsalt
  12. 1 tspVanilla extract

Cooking Instructions

    Caramel syrup-In a small sauce pan, on medium low heat, melt 1/2 cup sugar and 1/4 cup water. Once it turns deep amber color, keep the syrup to cool.

    Preheat the oven to 350°F.

    In a large bowl, add the dry ingredients.

  4. 4

    Now put the chopped dates,carrots and walnuts into the dry mixture and mix until well coated.

  5. 5

    Mix together the wet ingredients-oil,eggs,sugar and caramel syrup in another large bowl.

  6. 6

    Now fold the dry ingredient mixture into the wet until well combined.

  7. 7

    Pour the batter into the prepared cake tin.

    Bake for 30 mins or until a tooth pick inserted into the center comes out clean.

    Cool the cake on a wire rack. Slice and serve like that or with cream cheese frosting.

    Trust me the cakes tastes absolutely delicious even without a frosting!

i always need to drop temp and cook for at least another 30mins is this the same with anyone else
