Ingredients

5 Muffins
  1. Dry
  2. 1. 260g white cake flour
  3. 2. 160g sugar white
  4. 4. 2 tsp baking powder
  5. 5. ½ tsp baking soda
  6. 6. 1 pinch salt
  7. 7. 2 tsp cinnamon powder
  8. 8. ½ cup seedless raisins
  9. Wet
  10. 1. 75 ml cooking oil
  11. 2. ½ cup Bulgarian yogurt
  12. 3. ½ cup full cream milk
  13. 4. 1 egg beaten
  14. 5. 1 tsp vanilla essence
  15. 6. 2½ cups chopped golden delicious apples
  16. Others
  17. 1x Apple per muffin
  18. White sugar for sprinkling

Cooking Instructions

    Preheat oven to 180°c

  2. 2

    Place dry ingredients intova large mixing bowl

  3. 3

    Mix thoroughly

  4. 4

    Combine we ingredients in a small mixing bowl

  5. 5

    Add wet mix to dry mix

  6. 6

    Combine well with muffin fork

  7. 7

    Do not overwork the mixture (but ensure all dry mix is mixed)

  8. 8

    Ensure muffin trays are properly sprayed

  9. 9

    Spoon the muffin mixture into the muffin pan (mixture should come just below top level of pan)

    Smoth top of the mixture with folding spatula ensuring the mixture covers the holder

  11. 11

    Sprinkle each muffin with white sugar, ensuring you cover the entire top

  12. 12

    Top with a slice of apple as a garnish

  13. 13

    Ensure that empty muffin holders are filled with water

  14. 14

    Ensure ua baking timer is set

  15. 15

    Bake into the oven 180°c for 25 minutes

  16. 16

    To check that the muffins are baked through, insert the back end of the fork into the center of the muffin. If it comes out clean, with no mixture clinging to the surface - the muffi is baked

    Place muffin in a cooling rack to cool with a fun
