When I was little my mom and I would go to a Korean market where they made cucumber salad. This is my version of it. Still haven't been able to get that childhood taste but it is still great!

A recipe from my mom who's from Stuttgart :) German cucumber salad marinates the cucumbers and other veggies in a vinegar-heavy dressing so it's rather tart and super refreshing in the summer. Also no oil so very healthy!

A nice summertime side dish for cookouts and family gatherings

The only thing i do differently on the recipe is i use one large seedless cucumber, around 12" and omit the tomatoes. Very tasty side dish, enjoy!

This has become a go-to for weekly meal prepping. It's such a simple, but tasty recipe and adds a lot of freshness to a meal. I usually pair it with some quinoa or brown rice, some chicken or drained and rinsed chickpeas and some feta cheese. If you'd like to take some of the 'bite' out of the raw onion, soak it in some cold water for a few minutes first.

This is a simple recipe from my childhood. My stepfather always made this growing up. We ate this as a side dish, as an appetizer, at cookouts,...even as a topper for other foods! He usually only did "Cucumbers & Tomatoes in Italian Dressing" but when I started making it myself in my late 20s I started adding onion because I'm obsessed with them! 😆👌 Then, in my early 30s a good friend made this at her home with the addition of green peppers as she had grown a lot of them that year. So now, my personal recipe has adapted to the inclusion of all of these wonderful foods! I also, play around occasionally with the dressing. 😎👍 This particular time I used a raspberry vinaigrette in place of Italian Dressing & I have also used regular vinaigrettes as well. This is always a nice addition to dinner or the cookout. And even as a midday snack! 👏🤤

I wanted to make a bangbangji like dish, so I came up with this. Now it's part of our family's regular rotation.There's nothing to this recipe. Just be careful not to overcook the chicken tenders. For 2 servings. Recipe by Chiton

I made this when I was out of dressing. It was really good, so I've been relying on it ever since.This is also good with mizuna greens or green bell peppers instead of cucumber.If you leave it standing for too long the tofu will start to exude moisture, so I recommend making it just before you plan to eat it.
