Jollof Rice garnished with cucumber and cabbage

Cooking Instructions

Wash spiced and put the meat on fire to cook. When cooked, drop,remove the meat from the stock, fry or grill.

Measure the rice, add salt and rub the rice with both hands. Rub the rice properly for about 10mins. Add water and wash, wash rice until water comes out clear. Put in the colander and set aside.

Put pot on fire, when hot add veg. Oil. When oil is hot add onions and pour the blended tomatoes and pepper,garlic and ginger. Allow to boil until the water in the sauce dries up.

Add the seasoning cube and salt to taste. Add the spices and allow to fry for 5-7mins. Add the meat broth and water and allow to boil.

Add the rice,mix and allow to cook. After 10mins of cooking check the level of the water and the softness of the rice, if still strong add little water.

When cooked, mix properly using a spatula and allow on low heat to dry up.

Wash and diced the cucumber and cabbage. Use it to dress the rice when dished.
