  1. 300 gself raising flour
  2. 200 gmargarine
  3. 2eggs
  4. 120 gcastor sugar
  5. 8 glemon zest
  6. 1lemon squeezed juice
  7. 1 tspraspberry essence
  8. 50 graspberry fruits
  9. 200 mlGreek yoghurt
  10. I used butter cream for icing

Cooking Instructions

    Preheat oven to 180degrees...prepare baking tin....using a mixer beat sugar and margarine till pale, add egg one by one as you continue beating till fully incorporated.....add lemon zest, juice and essence, beat for 1min

    Add raspberry, fold in flour alternating with Greek yoghurt, bake for 60mins

  3. 3

    When ready test with a knife if it comes out clean, its ready, decorate as desired!!
