Preheat the grill to hot, then toast the slices of bread on both sides until lightly golden

Whisk the eggs with the milk, chives, half of the chopped onion springs, half of the cubed butter and some seasoning

Melt the remaining butter in a large frying pan over a moderate heat until the butter stops foaming
- 4
Sauté the mushrooms with seasoning and the remaining onion springs until golden brown and tender
- 5
Scramble the eggs in a hot saucepan set over a medium heat, stirring frequently until just cooked through and shiny in appearance
- 6
Adjust the seasoning to taste and spoon in top of the toast, placing them in plates
spoon over the mushrooms and serve immediately

So I wanted to taste the original but I can’t because the original is made with guanciale (cured pig jowl/cheek) not halal. So I decided to make the Halal version or the closest I can get to it.
