Delicious moist cake with a great twist of flavors

A delicious date and banana cake. Heavy and moist and just the perfect amount of sweetness.

I wanted to create a low calorie cake that can be made in a frying pan using Lakanto (100% natural sweetener)! The top surface comes out crispy, with a moist cake base. It can be made in no time, so its good for breakfast or a snack.Be careful not to burn yourself when putting the bananas into the frying pan. The batter will cook evenly if spread in a thin, even layer. By using two bananas to pack the bottom of the frying pan, they won't shift as much when pouring in the cake batter. I based this recipe on Makiko Fujino's "Tart Tartin Style Cake" and adjusted the ingredients to my preference and also reduced the amount of tools used to save on clean-up time.I use a Teflon-coated deep pot with removable handles that can be used in the oven. This saves on clean-up time and is simple and easy for cooking! But it's fine to use a pot with handles that can be put in the oven. If you don't have one, make the caramel in a small sauce pan, then pour it into a round cake pan. The cake is delicious fresh from the oven, but if you let it sit for 1 to 2 days, the caramelized apples will blend into the cake and it will become nice and moist. Recipe by *porin*

I started making these when I was experimenting W/ potato pancakes I just found I liked it better with just potatoes onions salt pepper. They started small and then evolved into a plate size thing:)
