Cooking Instructions

Ingredients are as described above and shown below

Cut and slice vegetables as shown in the picture below.

Rinse the chicken laps and place in a pan or pot like this.

Add some slice onions, 1/4 tsp black pepper onto the chicken.

Sprinkle some salt on the chicken.

Add a tsp of ground red scotch bonnet on it.

Also add 2 cups of water, cover and cook until meat is tender on both sides.

Here I am turning on the other side to cook.

In aIiAs the chicken is cooking get a bowl and combine all the chopped and sliced veggies. Here is starting with carrots and peppers.

Here all the veggies are put together. Set aside.

In another bowl, add the eggs, 1 tsp crushed peppers, 1/4 tsp black pepper and salt to taste.

Preheat 2 cups of oil in a pan, dropping a slice of onion in it.

Place the chicken in the eggs and turn on both sides to completely cover with the eggs.

Place gently on the sizling oil and let it fry on low heat to a nice golden color.

Now place the sliced onions in a bowl, add 2 tsp oil and the sugar. Saute it and let sit for about 20 mins.

Place the onion in a pan with 2 tbsp oil. Add the mixed veggies and saute. Pour the leftover eggs into the pan as it cooks.

Now you can add the leftover chicken stock and adjust the salt.

Serve on a nice plate and garnish with black pepper powder.
