Apple Cider and Fireball

I found this recipe in an old cookbook titled Crockery Cookery by Mable Hoffman. This makes a great addition to any fall or winter meal, and will leave your home smelling warm and inviting.

I absolutely got the inspiration for this from the BBQ Pit Boys. I used a mix of their recipe and my smoked chicken recipe for filling the cavity and brine. I can't wait until warmer weather so a can try out a spatchcock version of this on the smoker! This is so juicy and packed full of flavor, roasted turkey is no longer just for Thanksgiving.

Sometimes things are quick and easy, sometimes they're long and complicated while other times they're still extremely simple yet take time and patience to prepare. This is one of those recipes, but I promise if you have the time, the patience and the tools you will not regret making this recipe. Starting with a brine is the key to begin building the flavor profile and ensuring your meat is moist and succulent. This is one recipe that is all my own from the ground up. We enjoyed it immensely so I truly hope you do too.

Run Golden Delicious or Granny Smith apple peels, cores, quartered, blemished and dropped apples in three pound batches through the tabletop press. Three lbs. of apples make a pint of juice. The left over mash is a special treat for the horses. Ten pounds of apples make one pound of apple syrup. Apple syrup is used to make Sauerbraten dishes.

A low alcohol version of the traditional margarita, using sparkling apple cider as the alcohol carrier for the drink, with lime and 2 Tbs Tequila or Mescal and Cointreau per tall glass for flavor. My friend Jane tasted this in West Virginia and recommended I make this summer drink with my home made apple cider. Thank you, Jane. Refreshing, and the drink ended up 4% alcohol, 3% with ice, lighter than light beer.

I found a bunch of apple cider recipes for that took 1-2 hours AT LEAST, and we just got a bunch of apples . I wanted to make homemade apple cider in less than an hour. So I started experimenting...
