Another easy, throw together recipe that fills the house with such great aromas as it cooks. I like doing this in the pressure cooker as we can't wait to dig in. Quick prep the night before and dinner couldn't be easier or tastier.

Ingredients

6 servings
  1. marinade and cooking liquid
  2. 2 tbspworcestershire sauce
  3. 4 cupvegetable stock
  4. 1/2 tbspfresh grated ginger
  5. 1/3 cupapple cider
  6. 1 tspsalt
  7. 2 tbspbrown sugar
  8. 1/4 tspfresh ground pepper
  9. meat
  10. 2 lbpork roast
  11. vegetables
  12. 1 cuppeeled, cored and quartered apples
  13. 1 cupwhole baby carrots
  14. 1 cuppeeled and quartered red onion
  15. 1 1/2 lbrussett potatoes, quartered

Cooking Instructions

    In a large bowl or zip lock bag add pork and all marinade ingredients

  2. 2

    Refrigerate for 8 hours or over night.

  3. 3

    Remove pork in marinade from refrigeration while preparing other ingredients. Bringing it to room temperature as much as possible.

    In either cooker add roast with all the marinade and rest of ingredients.

  5. 5

    Cover and cook in slow cooker on low for 10 hours. High for 5.

  6. 6

    In pressure cooker add to cooker, set to high pressure in an electric cooker and set for 30 minutes.

    Serve and enjoy.
