How to Make Coconut Jollof Rice

When I was younger, I thought the reason a particular rice is called coconut rice is because chopped coconuts are added.

Alas, I visited my aunt one day and she served what she called coconut rice. Trust me, I was busy looking for chopped coconuts in the rice😂

Not until now, I thought she didn't know how to cook coconut rice😀

So, here is a beautiful recipe on how to make coconut rice for your family and friends. Christmas is around the corner, and who said you can't spice it a little bit with coconut rice.

Ingredients

50 minutes

  1. 3 CupRice
  2. 1/2 CupVegetable Oil
  3. 8Balls Red Pepper
  4. 9Balls Tomato
  5. 1Big Ball Onions
  6. 75 gShredded Beef
  7. 80 gGrounded Crayfish
  8. 3Stock Cubes
  9. 1/2 tspSalt
  10. 50 gCarrot
  11. 50 gGreen Beans
  12. 4Smoked Panla Fish
  13. 1/2 CupMeat Stock
  14. 1 CupCoconut Milk
  15. I/2tsp Curry
  16. 1/2 tspThyme

Cooking Instructions

50 minutes
  1. 1

    Parboil rice in a separate pot.

    While rice is boiling in lala land, add oil to frying pan.

    Add onions when oil is hot.

  4. 4

    Add red pepper.

  5. 5

    Add chopped tomatoes.

  6. 6

    Stir until tomatoes look cooked.

  7. 7

    Add shredded beef.

  8. 8

    Add crayfish

  9. 9

    Add meat stock.

  10. 10

    Add stock cubes and salt

  11. 11

    Add curry and thyme.

  12. 12

    Stir well.

  13. 13

    Add coconut milk. Leave to boil for 4 minutes.

    Add parboiled rice.

  15. 15

    Stir thoroughly.

  16. 16

    Add smoked fish, carrot and green beans.

    Stir well and leave to cook.

  18. 18

    Serve hot with your choice juice.
