Cooking Instructions

Cut chicken breasts into cubes, wash and strain. Cut carrot and green pepper into cubes or julienne. Set aside. Slice the onion and dilute the cornflour in some water.drain the sweet corn,rinse and set aside.

Place a pot or skillet on heat.add the oil and allow to get hot. Add the onion, ginger and garlic pastes and the fresh pepper then stir fry for 3mins.add the chicken breasts and salt and continue stirring until the chicken turns brown.add the carrot,stir for few seconds then add some water(depending on how u want the soup). Close lid and bring to a boil.add the seasoning cubes,curry, thyme and turmeric,stir.now gradually add the cornflour mixture and stir. Cook on low heat.

Add the sweet corn and green pepper,cook for 3-5mins and your soup is ready. It could be served with anything of choice.

When I learned this recipe in junior college, it called for heating the flour with butter, and would become lumpy. I saw a TV show that showed sautéing onions before making the roux and adapted that procedure. Since then I've been making corn soup with onions.Since it burns easily and spits when boiling, be sure to mix well from the bottom.It hardens when cooled, so when heating leftovers the following day, be sure to mix before heating as well.
